Part of what I had for dinner tonight!!
Dinner- Homemade burgers (need to be adjusted, they were very squishy but YUMM), brussel sprouts, peas, bok choy, spinach, left over couscous and cauliflower and broccoli (they were in the burgers), capsicum
Vegan Chili Burgers (recipe)
Lunch: lentil burger thing, leftover salad from dinner last night, a tomato and lovely greentea from Harrods! :-)
Vegan Tempeh Cakes
8 ounce Tempeh (blended)(225g)
1/2 Oninon (chopped)
1/2 cup Green, Yellow, or Red Bell Peppers (chopped)
1 Green Onion (chopped)
1 Carrot (chopped)
3 Garlic Cloves (minced)
2 tbsp Parsley (chopped)
Dash of Cumin
Salt & Pepper to taste
Mix all ingredients together in a bowl. Form mixture into small cakes. Cook each side of “cake” on a greased pan until cooked thorough and browned on the outside. Enjoy! :)
Dinner- Burger with falafels, egg white, apple sauce, brocolini and avocado. Had it with orange juice and water.
Dinner- Homemade lentil burger and apple sauce, avocado, red onion, salsa/ spicy pumpkin spread, brocolini on a brown roll. Had it with orange juice and water.
Havn’t had a brown roll/ brown bread in ages.
But I ate it all C:
